Life is pretty darn sweet for the owners of A La Folie, Alexis Karter and Jerome Landrieu, head chef. A La Folie is French for “like crazy” and recently made its 河北快3走势图 in our very own Naperville. There, you can expect to see macarons, chocolate and other tasty treats sold in their retail section of the shop.
The CVB spoke with Alexis and Jerome about the newest addition to our Naperville community, and we even learned the Hallmark-like story about how A La Folie was established.
A La Folie is French for “Like Crazy,” so what is the story behind naming it that?
Alexis: It’s kind of funny! When Jerome and I first met, he was single, and we were friends and colleagues. He went on dates but seemed to never find “the one.” I asked him what he was looking for, and he said he wanted a girl who made him nuts — who he couldn’t stop thinking about. Time went by, and we realized that we were actually pretty crazy about each other. When we say ‘Je t’aime a la folie,’ (I love you like crazy) it stems from that. Now, we are married and have a 3-year-old boy and a 5-year-old girl who also drive us nuts!
What inspired you to open the business?
Alexis: A lot of things! We met at work, so we knew we worked well together. It has been a lifelong dream for Jerome to work for himself, though he didn’t know exactly what he would do. My family owned a restaurant growing up, so I guess you could say it’s in my blood.
Jerome: For the past 25 years, I have been working chef-to-chef, exchanging ideas and recipes, discussing technical aspects of different products and setting out to create new food trends. I always felt like I was missing a connection with the customer — I spent the majority of my career training other chefs. I’m very happy to have the opportunity to create products for people to purchase and enjoy! That’s what it’s all about for me now: bringing people joy through my creations.
Since A La Folie is located in Naperville, what is your favorite aspect about the city/community?
Jerome: We moved to Naperville from Chicago after our son was born. Looking at different suburbs, I was really drawn to Naperville because of the eclectic, growing food scene. Working in the food industry, I’ve been fortunate enough to enjoy food from, not only pastry chefs, but also savory chefs. There are a lot of excellent dining options around Naperville.
Alexis: We love the community, family-focused feeling we get here, too. With having two little kids, we appreciate all of the amenities the City of Naperville has for families!
What is the process for creating new and unique delicacies to sell in your store?
Jerome: Constant improvement and R&D (research and development). I make a great recipe, and then I continue to refine and perfect it. In a way, I’ll never be satisfied, but I believe everything can be improved upon. In our kitchen, we are constantly testing new techniques, flavors and textures to come up with innovative treats. It’s a real pleasure to see your customers enjoying your hard work!
What do you think makes your store stand out?
Alexis: It’s a family-owned business, and we are the people you are going to meet when you visit us. It’s not a traditional retail store in a traditional retail location. We have a brand-new state-of-the-art production kitchen, and in the front of that kitchen, we have a small retail store where we sell our macarons, chocolate and other goodies. We have a tasting table for our wholesale clients, so when we have a large wedding or event, we can all sit down together and see and taste our products up close and personal, so our customers know exactly what they’ll be ordering. We are even happy to give tours of our kitchen so our customers can see how macarons are made and meet our pastry team.
Any additional information you would like to provide about your new store?
We are really happy and proud to have a new business here in Naperville where we live. We are always open to suggestions and special requests. Our core will continue to be macarons and chocolate, but we will definitely expand our repertoire of products and flavor offerings as we grow, so please stay tuned!
